Salad with Salmon and Feta cheese.

It’s a very long time since I ate it. It must have been in Luleå, with Alf and Fertsu.

I haven’t been able to find the salmon (from ICA, with the recipe on the back of the bag). But last week I found it. And today I prepared the salad. That will be my lunch tomorrow.

300 g salmon
1 table spoon oil
200 g (fresh) pasta
200 g feta cheese
150 g fresh spinach
250 g (cocktail) tomatoes
20 black olives

3 table spoons olive oil
1 tea spoon French mustard
1 ml (kryddmått) salt
1 ml pepper

1. Brown the salmon in the oil.
2. Prepare the pasta.
3. Cut the feta cheese. Rinse the spinach and tomatoes.
4. Do the sauce.
5. Mix everything.
6. Serve with bread.

Yes, I like the salmon to be well done.


Oven Baked Apples.

On Sunday when I passed the fruits and vegetables in the supermarket, I could not resist the smell of the apples. Swedish apples. Tasty. Bitter. Sour. I just had to buy a few of them. To make oven baked apples.

4-5 apples
75 g butter
½ dl granulated sugar
1 teaspoon cinnamon
3 dl porridge oats

Preheat oven to 225ºC. Peel, core and, slice the apples. Place the slices in a greased baking pan.
In a bowl, combine the dry ingredients. Rub the butter with your finger tips into the mixture. Sprinkle the mixture over the apple slices. Bake in the middle of the oven, 20-25 minutes.
Serve warm with vanilla cream, vanilla ice-cream, or whipped cream on the side.

On my plate the oven baked apple slices get to swim in vanilla cream!
